About

Chicago restaurateur Jared Leonard (Stone Soup Collective) was on a trip to Nashville to attend a BBQ conference, when he first tried this classic spicy Nashville preparation of fried chicken.  He was hooked, and the journey began. Hosting chicken labs in his catering kitchen, he spent over a year fine-tuning the recipe for the best way to make it "Nashville Hot" fried chicken.  Alongside his team, they developed classic southern biscuits, collard greens, and other traditional southern fare - and our first store opened in 2016. 
 

Welcome to The Budlong, a Nashville Hot Chicken Joint.  Hot Chicken is enjoyably spicy, deliciously crispy, fried chicken; first served as a plate of revenge to Thornton Prince in Nashville, TN.

 First timer? Try the classic. Like it hot? Try the Xtra Hot! Either way, we know you’ll love it! We use locally sourced, anti-biotic & hormone free chickens. Each plate is served atop Texas toast, with house-made pickles. Our sides are made from scratch daily. Budlong biscuits, collard greens, mac n cheese, & red potato salad.  We also serve house-made banana pudding!
